Description

A comforting dish combining sweet and savory flavors with tender chicken and fluffy rice, perfect for family dinners.


Ingredients

  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice (white, brown, or jasmine)
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (for serving)
  • Crushed red pepper (optional)


Instructions

  1. Start by heating the olive or sesame oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant but not browned, about 1 minute.
  3. Place the chicken in the skillet and season with salt and pepper. Cook for 5-7 minutes on both sides until golden brown.
  4. In a small bowl, whisk together soy sauce, pineapple juice, honey or brown sugar, rice vinegar, cornstarch mixed with water, and additional water.
  5. Once the chicken is done, pour the sauce over it. Add the pineapple chunks and diced red bell pepper. Simmer until the sauce thickens, about 3-5 minutes.
  6. Serve the chicken and sauce over a bed of cooked rice, garnished with chopped green onions and sesame seeds.

Notes

Consider marinating the chicken for an hour in the sauce mixture for improved flavor and tenderness. Adjust sauce sweetness as needed.
