Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. In another bowl, cream the softened butter and sugar until light. Add eggs one at a time, mixing well after each addition.
  4. Stir in the drained pineapple and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
