Description

A comforting vegetable soup recipe packed with flavor and nutrition, ideal for family gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Add the bell pepper and zucchini, cooking for an additional 3 minutes.
  4. Pour in the vegetable broth and diced tomatoes. Add thyme, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
