Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
- Add the bell pepper and zucchini, cooking for an additional 3 minutes.
- Pour in the vegetable broth and diced tomatoes. Add thyme, basil, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
