Description

A delightful dish combining penne pasta, burst cherry tomatoes, and aromatic garlic, topped with rich pesto for a flavorful experience.


Ingredients

  • 8 ounces penne pasta (about 2 cups)
  • 2 tablespoons salt (for pasta water)
  • 2 teaspoons olive oil
  • 2 cups cherry tomatoes
  • 2 cloves garlic, sliced
  • 8 fluid ounces pesto sauce (about 1 cup)


Instructions

  1. Bring a pot of water to a boil. Add 2 tablespoons of salt to flavor the water.
  2. Add 8 ounces of penne pasta and cook according to the package instructions until al dente, about 7-8 minutes. Drain the pasta and set it aside.
  3. In a pan over medium heat, heat 2 teaspoons of olive oil. Add 2 cups of cherry tomatoes, cooking until they start to brown and release their liquids, approximately 5 minutes.
  4. Incorporate 2 sliced cloves of garlic and continue to cook until the garlic begins to brown and become aromatic, about 1-2 minutes. Remove the pan from heat.
  5. Add the drained penne to the pan with tomatoes and garlic. Pour 8 fluid ounces of pesto sauce over the pasta and stir everything together to combine well. Serve warm.

Notes

Reserve a small cup of pasta water before draining to adjust consistency if needed. Use fresh ingredients for best flavor.
