Ingredients

  • – 1 whole chicken about 1.7 kg (3.75 lbs)
  • – 3 tablespoons (45 ml) vegetable oil
  • – 1 teaspoon (5 ml) salt
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1 bunch thyme + 15 ml (1 tbsp) fresh thyme
  • – 1 head garlic sliced in half horizontally
  • – 1/2 onion
  • – Lemon slices for serving


Instructions

  1. Set your oven to 400°F to heat up.
  2. Dry the bird using a paper towel, take out the internal organs, fold the wings under the breast, and bind the legs with kitchen string.
  3. Mix together vegetable oil, salt, pepper, and fresh thyme in a small bowl. Coat the chicken thoroughly with this oil mixture, ensuring you reach beneath the skin too.
  4. Fill the cavity of the chicken with halved garlic, a portion of onion, and thyme bunch.
  5. Position the chicken breast side up on a sizable roasting pan and bake it in the oven until the skin turns a golden color and a meat thermometer inserted into the chicken shows 165°F, which should take around 60-75 minutes.
  6. Baste the chicken with the juices collected at the base of the pan and let it sit for 15 minutes before slicing.
  7. Serve with lemon slices.
