Ingredients
- – 1 whole chicken about 1.7 kg (3.75 lbs)
- – 3 tablespoons (45 ml) vegetable oil
- – 1 teaspoon (5 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1 bunch thyme + 15 ml (1 tbsp) fresh thyme
- – 1 head garlic sliced in half horizontally
- – 1/2 onion
- – Lemon slices for serving
Instructions
- Set your oven to 400°F to heat up.
- Dry the bird using a paper towel, take out the internal organs, fold the wings under the breast, and bind the legs with kitchen string.
- Mix together vegetable oil, salt, pepper, and fresh thyme in a small bowl. Coat the chicken thoroughly with this oil mixture, ensuring you reach beneath the skin too.
- Fill the cavity of the chicken with halved garlic, a portion of onion, and thyme bunch.
- Position the chicken breast side up on a sizable roasting pan and bake it in the oven until the skin turns a golden color and a meat thermometer inserted into the chicken shows 165°F, which should take around 60-75 minutes.
- Baste the chicken with the juices collected at the base of the pan and let it sit for 15 minutes before slicing.
- Serve with lemon slices.
