Ingredients
- 2 large carrots
- 2 bell peppers (any colors)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Preheat the grill to medium-high heat.
- Peel the carrots and slice them into thick sticks. Cut the bell peppers into quarters and remove the seeds.
- In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, smoked paprika, salt, and pepper.
- Add the carrots and bell peppers to the marinade, tossing to coat evenly. Allow them to marinate for at least 15 minutes.
- Place the marinated vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and have grill marks.
- Remove from the grill and garnish with fresh herbs before serving.
Notes
Experiment with different herbs or spices in the marinade. For enhanced flavor, marinate overnight.
