Description

A vibrant and nutritious platter of grilled marinated carrots and bell peppers, perfect for summer gatherings.


Ingredients

  • 2 large carrots
  • 2 bell peppers (any colors)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish


Instructions

  1. Preheat the grill to medium-high heat.
  2. Peel the carrots and slice them into thick sticks. Cut the bell peppers into quarters and remove the seeds.
  3. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, smoked paprika, salt, and pepper.
  4. Add the carrots and bell peppers to the marinade, tossing to coat evenly. Allow them to marinate for at least 15 minutes.
  5. Place the marinated vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and have grill marks.
  6. Remove from the grill and garnish with fresh herbs before serving.

Notes

Experiment with different herbs or spices in the marinade. For enhanced flavor, marinate overnight.
