Healthy Peanut Butter Protein Cookies that are easy to make and perfect for a nutritious snack.
Ingredients
- 2 large eggs
- ⅔ cup unsweetened creamy peanut butter
- 1 (5.3-oz) container plain Greek yogurt
- 1 tsp pure vanilla extract
- 1 1/2 cups quick oats
- 1/2 cup protein powder of choice
- ⅔ cup granulated sweetener of choice
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp sea salt
- 2/3 cup sugar-free chocolate chips or regular chocolate chips
Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a large mixing bowl, combine the eggs, peanut butter, Greek yogurt, and vanilla extract; mix until completely combined and creamy.
- Add the quick oats, protein powder, sweetener, baking powder, baking soda, salt, and cinnamon to the mixture. Stir until a dough forms.
- Fold in the chocolate chips gently.
- Drop mounds of dough onto the prepared baking sheet, leaving space between each mound.
- Bake on the center rack for 9-11 minutes, or until the edges appear slightly golden.
- Let the cookies cool for at least 10 minutes before enjoying.
Notes
Cookies can be customized with different add-ins like nuts. Chill the dough for better shape retention.
