Ingredients
- 2 cups fresh peaches, diced
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup oatmeal (for streusel topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the milk.
- Mix the flour, baking powder, baking soda, cinnamon, and salt in another bowl. Gradually add this dry mixture to the wet mixture until just combined.
- Fold in the diced peaches.
- Pour the batter into the prepared pan.
- Mix the brown sugar, oatmeal, and a little melted butter to create the streusel topping. Sprinkle this mixture over the cake batter.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
