Description

A delightful peach coffee cake that combines juicy peaches with a soft, tender cake, perfect for brunch or dessert.


Ingredients

  • 2 cups fresh peaches, diced
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup oatmeal (for streusel topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the milk.
  4. Mix the flour, baking powder, baking soda, cinnamon, and salt in another bowl. Gradually add this dry mixture to the wet mixture until just combined.
  5. Fold in the diced peaches.
  6. Pour the batter into the prepared pan.
  7. Mix the brown sugar, oatmeal, and a little melted butter to create the streusel topping. Sprinkle this mixture over the cake batter.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool slightly before serving.
