Description

Delightful cookies bursting with fresh peach flavor and a hint of cinnamon, inspired by classic peach cobbler.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this bowl aside.
  3. In a large bowl, beat the room temperature butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until the ingredients are well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  6. Gently fold in the diced peaches, ensuring even distribution throughout the dough.
  7. Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet.
  8. In a small bowl, mix together the ground cinnamon and 1/4 cup sugar. Sprinkle this mixture generously over the cookie dough.
  9. Bake for 10 to 12 minutes or until edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the cookie dough for 30 minutes for thicker cookies. Use fresh, ripe peaches for best flavor.
