Delightful cookies bursting with fresh peach flavor and a hint of cinnamon, inspired by classic peach cobbler.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced fresh peaches
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this bowl aside.
- In a large bowl, beat the room temperature butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until the ingredients are well combined.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
- Gently fold in the diced peaches, ensuring even distribution throughout the dough.
- Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet.
- In a small bowl, mix together the ground cinnamon and 1/4 cup sugar. Sprinkle this mixture generously over the cookie dough.
- Bake for 10 to 12 minutes or until edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Chill the cookie dough for 30 minutes for thicker cookies. Use fresh, ripe peaches for best flavor.
