Ingredients
- 1 cup small pasta (ditalini or elbow pasta)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 lb ground beef
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion, minced garlic, carrot, and celery. Sauté until softened.
- Introduce the ground beef to the pot and cook until browned. Be sure to drain any excess fat.
- Stir in the diced tomatoes, beef broth, kidney beans, and cannellini beans.
- Season with Italian seasoning, salt, and pepper to taste. Bring to a boil.
- Add the pasta and cook according to package instructions until al dente.
