Description

A comforting dish that combines pasta and beans for a nourishing meal, perfect for family gatherings.


Ingredients

  • 1 cup small pasta (ditalini or elbow pasta)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 lb ground beef
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion, minced garlic, carrot, and celery. Sauté until softened.
  3. Introduce the ground beef to the pot and cook until browned. Be sure to drain any excess fat.
  4. Stir in the diced tomatoes, beef broth, kidney beans, and cannellini beans.
  5. Season with Italian seasoning, salt, and pepper to taste. Bring to a boil.
  6. Add the pasta and cook according to package instructions until al dente.
