Description

A deliciously easy dish that transforms fresh asparagus into a flavorful side, roasted with olive oil and sprinkled with Parmesan cheese.


Ingredients

  • 1.5 to 2 pounds fresh asparagus
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: juice of 1 lemon


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and prepare the asparagus by snapping off the tough parts.
  3. In a large bowl, add the asparagus and drizzle generously with olive oil. Toss to coat fully.
  4. Sprinkle garlic powder, salt, and black pepper evenly over the asparagus, mixing well to combine.
  5. Arrange the spears in a single layer on a baking sheet.
  6. Generously sprinkle the grated Parmesan cheese across the asparagus spears.
  7. Roast in the oven for 8-12 minutes, checking for doneness until tender-crisp and cheese is golden brown.
  8. Optional: Squeeze fresh lemon juice over the asparagus before serving.

Notes

For best results, use thick asparagus spears and freshly grated Parmesan cheese.
