Description

Delightful mini muffins that capture the joy of pancakes in bite-sized form, perfect for breakfast or brunch.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk + 1 tablespoon vinegar (or buttermilk)
  • 2 tablespoons oil
  • 1 egg


Instructions

  1. Preheat your oven to 375°F (190°C) and grease mini muffin tins with cooking spray.
  2. In a bowl, combine milk and vinegar, and let it rest for 5 minutes until it curdles.
  3. Stir in oil and egg into the curdled milk mixture until well combined.
  4. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  5. Combine wet and dry mixtures until smooth, being careful not to overmix.
  6. Scoop about one tablespoon of batter into each mini muffin cup.
  7. Bake for 8 minutes, or until puffed and pale. Let cool before serving.

Notes

Feel free to experiment with flavors by adding chocolate chips or fruit. Prepare the batter the night before for convenience.
