Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk + 1 tablespoon vinegar (or buttermilk)
- 2 tablespoons oil
- 1 egg
Instructions
- Preheat your oven to 375°F (190°C) and grease mini muffin tins with cooking spray.
- In a bowl, combine milk and vinegar, and let it rest for 5 minutes until it curdles.
- Stir in oil and egg into the curdled milk mixture until well combined.
- In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet and dry mixtures until smooth, being careful not to overmix.
- Scoop about one tablespoon of batter into each mini muffin cup.
- Bake for 8 minutes, or until puffed and pale. Let cool before serving.
Notes
Feel free to experiment with flavors by adding chocolate chips or fruit. Prepare the batter the night before for convenience.
