Ingredients
- 2.5 cups pancake mix
- 2 tablespoons granulated sugar
- 2 large eggs
- 4 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 2.5 cups milk
- 1 pound bacon, chopped and cooked
- 1 pint fresh blueberries
Instructions
- Preheat your oven to 350°F.
- Cook and chop the bacon into bite-sized pieces.
- Toss the blueberries in ½ teaspoon of pancake mix to prevent them from sinking.
- In a bowl, whisk the eggs, then gradually add the melted butter while whisking.
- Whisk in the vanilla extract and milk.
- In another bowl, mix pancake mix and sugar together.
- Combine the wet ingredients with the dry ingredients and gently fold in the blueberries and bacon bits.
- Pour the batter into a baking dish and bake for 35 to 45 minutes, checking for doneness with a toothpick.
- Let it cool slightly before serving with maple syrup.
Notes
For a different twist, try substituting blueberries for strawberries or bananas. You can also use turkey bacon for a lighter option.
