Description

A delightful pancake casserole filled with fresh blueberries and crispy bacon, perfect for cozy family breakfasts or gatherings.


Ingredients

  • 2.5 cups pancake mix
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 4 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 2.5 cups milk
  • 1 pound bacon, chopped and cooked
  • 1 pint fresh blueberries


Instructions

  1. Preheat your oven to 350°F.
  2. Cook and chop the bacon into bite-sized pieces.
  3. Toss the blueberries in ½ teaspoon of pancake mix to prevent them from sinking.
  4. In a bowl, whisk the eggs, then gradually add the melted butter while whisking.
  5. Whisk in the vanilla extract and milk.
  6. In another bowl, mix pancake mix and sugar together.
  7. Combine the wet ingredients with the dry ingredients and gently fold in the blueberries and bacon bits.
  8. Pour the batter into a baking dish and bake for 35 to 45 minutes, checking for doneness with a toothpick.
  9. Let it cool slightly before serving with maple syrup.

Notes

For a different twist, try substituting blueberries for strawberries or bananas. You can also use turkey bacon for a lighter option.
