A delicious and easy recipe for oven roasted vegetables, bringing out their natural flavors through roasting.
Ingredients
- 2 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Optional: Fresh herbs for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Chop the mixed vegetables into uniform pieces.
- In a large bowl, toss the vegetables with olive oil, garlic powder, oregano, salt, and pepper until well coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh herbs if desired. Serve warm.
