Description

A delicious and easy recipe for oven roasted vegetables, bringing out their natural flavors through roasting.


Ingredients

  • 2 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: Fresh herbs for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the mixed vegetables into uniform pieces.
  3. In a large bowl, toss the vegetables with olive oil, garlic powder, oregano, salt, and pepper until well coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh herbs if desired. Serve warm.
