Ingredients
- 2 cups assorted seasonal vegetables (carrots, bell peppers, zucchini, broccoli)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (like thyme or rosemary)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the vegetables into bite-sized pieces.
- In a large bowl, toss the vegetables with olive oil, salt, black pepper, garlic powder, and dried herbs until well coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and crispy at the edges.

Notes
