Ingredients

  • 4 large Green peppers (about 450 g)
  • 15 ml (1 tbsp) Vegetable oil
  • 450 g Ground beef
  • 2 cloves Garlic
  • 2 small Tomatoes (seeded and diced)
  • 15 ml (1 tbsp) Fresh parsley (chopped)
  • 5 ml (1/2 tsp) Sea salt
  • 5 ml (1/2 tsp) Black pepper
  • 115 g Cream cheese (at room temperature)
  • 60 g Grated cheddar cheese
  • 180 ml (3/4 cup) Mozzarella cheese (shredded)


Instructions

  1. Preheat the oven to a medium-high setting.
  2. Cut the tops off the green peppers and remove the seeds and membranes.
  3. Drizzle vegetable oil over the peppers and ensure they are evenly coated.
  4. In a skillet over medium heat, cook the ground beef until it’s browned.
  5. Add the minced garlic to the beef and cook for another minute.
  6. Stir in the diced tomatoes, chopped parsley, sea salt, and black pepper, and let it cook for 5 minutes.
  7. Remove the skillet from the heat and mix in the cream cheese until it’s fully combined.
  8. Stuff the peppers with the beef mixture.
  9. Place the stuffed peppers in a baking dish.
  10. Sprinkle grated cheddar cheese over the stuffed peppers.
  11. Cover the dish with aluminum foil.
  12. Bake in the preheated oven for 30 minutes.
  13. Remove the foil and spread shredded mozzarella cheese on top.
  14. Return to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  15. Let the peppers cool slightly before serving.
