Ingredients
- 4 large Green peppers (about 450 g)
- 15 ml (1 tbsp) Vegetable oil
- 450 g Ground beef
- 2 cloves Garlic
- 2 small Tomatoes (seeded and diced)
- 15 ml (1 tbsp) Fresh parsley (chopped)
- 5 ml (1/2 tsp) Sea salt
- 5 ml (1/2 tsp) Black pepper
- 115 g Cream cheese (at room temperature)
- 60 g Grated cheddar cheese
- 180 ml (3/4 cup) Mozzarella cheese (shredded)
Instructions
- Preheat the oven to a medium-high setting.
- Cut the tops off the green peppers and remove the seeds and membranes.
- Drizzle vegetable oil over the peppers and ensure they are evenly coated.
- In a skillet over medium heat, cook the ground beef until it’s browned.
- Add the minced garlic to the beef and cook for another minute.
- Stir in the diced tomatoes, chopped parsley, sea salt, and black pepper, and let it cook for 5 minutes.
- Remove the skillet from the heat and mix in the cream cheese until it’s fully combined.
- Stuff the peppers with the beef mixture.
- Place the stuffed peppers in a baking dish.
- Sprinkle grated cheddar cheese over the stuffed peppers.
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and spread shredded mozzarella cheese on top.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the peppers cool slightly before serving.
