Description

A comforting side dish featuring oven-roasted potatoes and green beans, enhanced with herbs and spices for a delightful flavor.


Ingredients

  • 4 medium Potatoes, cut into chunks
  • 2 cups Green beans, trimmed
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • Fresh herbs (optional, such as rosemary or thyme)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into uniform chunks.
  3. Trim the ends of the green beans.
  4. In a large bowl, toss the potatoes and green beans with olive oil, salt, pepper, garlic powder, and herbs if using.
  5. Spread the vegetables on a baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, turning occasionally, until the potatoes are golden and tender.
  7. Serve warm with your choice of meat or as a standalone side dish.

Notes

For a crispier finish, increase the roasting time and check regularly to avoid burning.
