Ingredients
- 4 medium Potatoes, cut into chunks
- 2 cups Green beans, trimmed
- 3 tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Garlic powder
- Fresh herbs (optional, such as rosemary or thyme)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the potatoes into uniform chunks.
- Trim the ends of the green beans.
- In a large bowl, toss the potatoes and green beans with olive oil, salt, pepper, garlic powder, and herbs if using.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, turning occasionally, until the potatoes are golden and tender.
- Serve warm with your choice of meat or as a standalone side dish.
Notes
For a crispier finish, increase the roasting time and check regularly to avoid burning.
