A simple and delicious recipe for oven-roasted broccoli that brings out the vegetable’s natural sweetness, enhanced with garlic, lemon, and Parmesan.
Ingredients
- 1½ pounds fresh broccoli, trimmed and cut into florets
- 4 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- Juice and zest from ½ lemon, divided
- ⅛ teaspoon crushed red pepper or to taste
- Kosher salt and fresh cracked pepper to taste
- ¼ cup grated Parmesan cheese or to taste
Instructions
- Preheat the oven to 425°F.
- Toss the broccoli florets with the olive oil, minced garlic, lemon juice and zest, crushed red pepper, salt, and pepper until well-coated.
- Spread the broccoli on a baking sheet in a single layer.
- Roast in the oven for about 20-25 minutes, or until charred and fork-tender.
- Once the broccoli is out of the oven, sprinkle with grated Parmesan cheese before serving.
Notes
For more flavor, consider adding different spices or serving with a garnish of toasted nuts.
