Description
Oven roasted broccoli transforms this simple vegetable into a delicious side dish with rich flavors and a satisfying texture.
Ingredients
- 1 ½ lb broccoli florets (rinsed and thoroughly dried)
- 4 tbsp extra virgin olive oil (divided)
- 4 cloves garlic (minced)
- 1 tsp ground black pepper
- 1 tsp red pepper flakes
- ¾ tsp kosher salt (or to taste)
- 2 tbsp lemon juice (freshly squeezed)
Instructions
- Preheat your oven to 425°F.
- If using heads of broccoli, wash, dry thoroughly, and cut them into 1 ½-inch florets.
- In a small mixing bowl, combine 2 tablespoons of olive oil with the minced garlic, ground black pepper, red pepper flakes, and kosher salt. Set this mixture aside.
- Spread the broccoli out in a single layer on a rimmed baking sheet and drizzle with the remaining 2 tablespoons of olive oil. Toss until evenly coated and then spread the florets back into a single layer.
- Roast on the middle rack for 10 minutes. After this initial roast, remove the pan and drizzle with the prepared seasoned olive oil. Toss until the broccoli is evenly coated again. Return to the oven for another 8 minutes.
- Finally, remove the broccoli from the oven, drizzle with freshly squeezed lemon juice, and toss once more.
Notes
For added flavor, consider sprinkling grated parmesan before serving or broil for a minute for a crunchier texture. Experiment with spices or other vegetables for variations.
