Simple yet flavorful roasted broccoli with a lemon-garlic dressing, perfect for any family gathering.
Ingredients
- 1 pound broccoli (about 1 large head)
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon salt
- 2 twists black pepper
- 1½ tablespoons extra virgin olive oil
- 1½ tablespoons lemon juice
- 1 clove garlic (grated)
- ¼ teaspoon red pepper flakes
- ½ teaspoon salt
- ½ cup parmesan cheese (grated, or dairy-free cheese)
- ⅓ cup almonds (slivered or shaved, and toasted)
Instructions
- Preheat your oven to 425°F.
- On a large baking sheet, toss the broccoli florets with 1 tablespoon of extra virgin olive oil, ¼ teaspoon of salt, and 2 twists of black pepper.
- Spread the broccoli out in an even layer to ensure even roasting.
- Roast the broccoli for about 20 minutes or until it becomes crisp-tender and starts to brown slightly.
- In a separate bowl, mix together 1½ tablespoons of extra virgin olive oil, 1½ tablespoons of lemon juice, and the grated garlic. Stir in the red pepper flakes and remaining ½ teaspoon of salt.
- Once the broccoli is roasted, remove it from the oven and drizzle the lemon-garlic dressing over it, tossing to coat.
- Finally, sprinkle the roasted broccoli with grated parmesan cheese and toasted almonds before serving.
Notes
For a vegan alternative, substitute the cheese with a nutritional yeast or dairy-free option.
