A foolproof method to achieve steakhouse perfection with oven-baked filet mignon, combining quality ingredients with basic techniques.
Ingredients
- 2 (6–8 oz) filet mignon steaks (1.5–2 inches thick)
- 1 tbsp kosher salt
- 1 tsp black pepper
- 2 tbsp avocado oil
- 3 tbsp unsalted butter
- 2 crushed garlic cloves
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 275°F.
- Pat the steaks dry to ensure they’re ready for seasoning.
- Generously season both sides with kosher salt and black pepper.
- Allow the steaks to rest for 30 minutes at room temperature.
- Heat avocado oil in a skillet over high heat until smoking hot.
- Sear each steak for 2 minutes on each side to develop a nice golden-brown exterior.
- Add butter, crushed garlic, and thyme to the skillet. Baste the steaks for 1 minute, coating them in the fragrant mixture.
- Transfer the skillet to the preheated oven. Bake for 8 to 12 minutes until the internal temperature reaches 130°F for medium-rare.
- Remove the skillet and let the steaks rest for 10 minutes before slicing.
Notes
For perfect doneness, use a meat thermometer. Adjust cooking times based on your preference for steak doneness.
