Ingredients
- – 2 tablespoons (30 ml) extra virgin olive oil
- – 4 spring onions trimmed and thinly sliced
- – 2 garlic cloves minced
- – 3 oz (85 g) baby spinach leaves (3 cups), as they are or coarsely chopped
- – 1¼ cups (300 ml) vegetable stock
- – 1 cup (200 g) orzo
- – 1 lemon juiced and zested
- – ¾ cup (75 g) crumbled Greek-style beef cheese plus more for garnish
- – ½ cup (20 g) fresh dill 1 cup chopped
Instructions
- Set a 10-inch skillet on medium heat and pour in the olive oil. Add most of the spring onions and the minced garlic, cooking them while stirring often, for approximately 3 minutes until they soften.
- Mix in the orzo, allowing it to toast alongside the onions and garlic for 1 to 2 minutes. Add the vegetable stock and let it come to a gentle boil. Put on the lid and let it cook on medium-low heat until the orzo is almost done and most of the liquid has evaporated, which should take about 10 to 14 minutes. Stir occasionally.
- Gradually incorporate the spinach, stirring from time to time, until it wilts, which should take around 2 minutes.
- Mix in the crumbled feta, dill, lemon zest, and juice. Serve the dish with additional crumbled cheese, the remaining sliced spring onions, and lemon wedges on the side.
