Ingredients

  • – 2 tablespoons (30 ml) extra virgin olive oil
  • – 4 spring onions trimmed and thinly sliced
  • – 2 garlic cloves minced
  • – 3 oz (85 g) baby spinach leaves (3 cups), as they are or coarsely chopped
  • – 1¼ cups (300 ml) vegetable stock
  • – 1 cup (200 g) orzo
  • – 1 lemon juiced and zested
  • – ¾ cup (75 g) crumbled Greek-style beef cheese plus more for garnish
  • – ½ cup (20 g) fresh dill 1 cup chopped

Instructions

  1. Set a 10-inch skillet on medium heat and pour in the olive oil. Add most of the spring onions and the minced garlic, cooking them while stirring often, for approximately 3 minutes until they soften.
  2. Mix in the orzo, allowing it to toast alongside the onions and garlic for 1 to 2 minutes. Add the vegetable stock and let it come to a gentle boil. Put on the lid and let it cook on medium-low heat until the orzo is almost done and most of the liquid has evaporated, which should take about 10 to 14 minutes. Stir occasionally.
  3. Gradually incorporate the spinach, stirring from time to time, until it wilts, which should take around 2 minutes.
  4. Mix in the crumbled feta, dill, lemon zest, and juice. Serve the dish with additional crumbled cheese, the remaining sliced spring onions, and lemon wedges on the side.

Notes

  • Use a high-quality extra virgin olive oil for enhanced flavor.
  • Adjust lemon juice and zest to suit your preference for citrusy taste.
  • Add cherry tomatoes or roasted red peppers for extra color and flavor.
