Ingredients
- 1 pound (454 g) elbow macaroni
- 4 tablespoons (1/4 cup / 60 ml) vegetable oil
- 4 tablespoons (1/4 cup / 30 g) all-purpose flour
- 3 cups (720 ml) whole milk
- 2 cups (200 g) sharp cheddar cheese, shredded
- 1 cup (100 g) mozzarella cheese, shredded
- 1 cup (100 g) Gruyère cheese, shredded
- Salt and pepper, to taste
- Pinch of ground nutmeg (optional)
- Extra shredded cheese for topping
Instructions
- Set your oven to 375°F (190°C) to warm up.
- Fill a large pot with salted water and bring it to a boil. Cook the elbow pasta until it’s firm to the bite, then drain and put aside.
- In a large saucepan, heat the vegetable oil over medium heat. Stir in the flour to form a roux and let it cook for approximately 1 minute.
- Slowly add the milk, whisking continuously until the mixture thickens and is lump-free.
- Reduce the heat and incorporate the cheddar, mozzarella, and Gruyère cheeses, stirring until completely melted and smooth.
- Season the sauce with salt, pepper, and a hint of nutmeg if desired.
- Combine the cooked macaroni with the cheese sauce, ensuring the pasta is thoroughly covered.
- Transfer the cheesy pasta mixture to a greased baking dish or a cast iron skillet.
- Top with additional shredded cheese.
- Place in the oven for 20–25 minutes, or until the top is bubbly and golden brown.
- Allow it to rest for 5 minutes before serving.
