Ingredients
- 1 package tortellini
- 1 quart vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 cups spinach, chopped
- 1 cup broccoli, chopped
- 1 can diced tomatoes
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Chop the vegetables: onion, garlic, carrots, spinach, and broccoli.
- Heat olive oil in a large pot over medium heat and sauté onion and garlic until translucent.
- Add carrots and sauté for 3-4 minutes.
- Pour in vegetable broth and diced tomatoes, bringing the mixture to a boil.
- Stir in the tortellini and cook according to package instructions.
- Once tortellini is cooked, add chopped spinach and broccoli.
