Description

A cozy and inviting one-pot pasta dish featuring broken lasagna noodles, earthy mushrooms, and creamy white beans.


Ingredients

  • 8 oz broken lasagna noodles
  • 8 oz sliced mushrooms
  • 15 oz canned or cooked white beans
  • 1 cup dairy-free cream or cashew cream
  • 4 cups vegetable broth
  • 3 cloves minced garlic
  • 1 medium chopped onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • Fresh parsley (optional, for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, cooking until soft.
  2. Add sliced mushrooms and cook until they soften, then add the broken lasagna noodles.
  3. Pour in vegetable broth and bring to a boil.
  4. Stir in the white beans and cook until the noodles are tender.
  5. Once cooked, stir in the dairy-free cream and season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley if desired.
