Ingredients
- 8 oz broken lasagna noodles
- 8 oz sliced mushrooms
- 15 oz canned or cooked white beans
- 1 cup dairy-free cream or cashew cream
- 4 cups vegetable broth
- 3 cloves minced garlic
- 1 medium chopped onion
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- Fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, cooking until soft.
- Add sliced mushrooms and cook until they soften, then add the broken lasagna noodles.
- Pour in vegetable broth and bring to a boil.
- Stir in the white beans and cook until the noodles are tender.
- Once cooked, stir in the dairy-free cream and season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.

For a creamier texture, adjust the amount of broth to your liking. You can also add other vegetables like spinach or bell peppers for added nutrition.
