Ingredients
- 1/2 tbsp (7.5 ml) olive oil
- 1/2 medium onion, chopped
- 2 sticks celery, chopped
- 1 pound (450 g) extra lean ground beef
- 3 cloves garlic, minced
- 2 heaping tbsp tomato paste
- 1 (28 fl oz) can diced tomatoes with juices
- 4 cups (960 ml) beef broth
- 2 large Russet potatoes, diced
- 1/4 tsp (1 ml) Italian seasoning or to taste
- Salt & pepper to taste
Instructions
- Pour the olive oil into your Instant Pot and add the chopped onion and celery. Activate the sauté function and let them cook for four minutes.
- Incorporate the ground beef and minced garlic. Stir occasionally and let it cook until the beef is browned, roughly five minutes. If using extra lean beef, draining excess fat may not be necessary, but you can remove some if preferred.
- Mix in the tomato paste, then include the diced tomatoes with their juices, beef broth, diced potatoes, and Italian seasoning.
- Secure the lid, ensure the valve is set to “sealing,” and initiate cooking on high pressure for eight minutes.
- When the time is up, perform a quick release of the pressure.
- Adjust the seasoning with salt and pepper to your liking, then serve immediately.
Notes
- Consider using fire-roasted diced tomatoes for a richer flavor. Add a pinch of red pepper flakes or a dash of hot sauce for a hint of spice. Mix in a cornstarch slurry for a thicker consistency before serving.
