A delicious and cozy one pot creamy carrot lentil soup that combines lentils, carrots, and coconut milk for a nutritious and hearty meal.
Ingredients
- 1 cup lentils (any variety)
- 2 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the diced onion and minced garlic until fragrant.
- Add the chopped carrots and cook for a few minutes until slightly softened.
- Stir in the rinsed lentils, cumin, turmeric, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and let it simmer for about 25 minutes until lentils are tender.
- Add coconut milk and mix well, warming for an additional 5 minutes.
- Taste and adjust seasoning as needed before serving warm.
Notes
For a thicker soup, blend a portion of the soup using an immersion blender. Feel free to experiment with spices for customized flavors.
