Description

A delicious and cozy one pot creamy carrot lentil soup that combines lentils, carrots, and coconut milk for a nutritious and hearty meal.


Ingredients

  • 1 cup lentils (any variety)
  • 2 cups carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onion and minced garlic until fragrant.
  3. Add the chopped carrots and cook for a few minutes until slightly softened.
  4. Stir in the rinsed lentils, cumin, turmeric, salt, and pepper.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and let it simmer for about 25 minutes until lentils are tender.
  7. Add coconut milk and mix well, warming for an additional 5 minutes.
  8. Taste and adjust seasoning as needed before serving warm.

Notes

For a thicker soup, blend a portion of the soup using an immersion blender. Feel free to experiment with spices for customized flavors.
