A comforting one-pot dish featuring juicy chicken, hearty brown rice, and vibrant broccoli, all topped with melty cheese.

Ingredients

  • Chicken (breast or thighs)
  • Brown rice
  • Broccoli
  • Cheese (cheddar or your choice)
  • Chicken broth
  • Olive oil
  • Garlic
  • Salt and pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken, seasoning with salt and pepper, and cook until browned.
  3. Stir in minced garlic and cook for another minute.
  4. Add brown rice and stir to coat.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer until rice is cooked (about 30-40 minutes).
  7. Once rice is tender, stir in broccoli and cook for an additional 5 minutes.
  8. Stir in cheese until melted.
  9. Serve warm and enjoy!

Notes

For added flavor, marinate the chicken in garlic, salt, and pepper before cooking. You can substitute broccoli with other vegetables like bell peppers or peas.
