Ingredients
- 1 clove garlic (2.8g)
- 1 yellow onion (150g)
- 2 bell peppers (300g)
- 1 Tbsp olive oil (15ml)
- 1/2 lb. ground beef (225g)
- 1 15 oz. can diced tomatoes (425g)
- 1 cup long grain white rice (uncooked) (185g)
- 1 tsp dried basil (1g)
- 1 tsp dried oregano (1g)
- 1/4 tsp (1 ml) freshly cracked black pepper
- 1 1/2 cups beef broth (360ml)
- 1 8 oz. can tomato sauce (225g)
- 1 tsp (5 ml) Worcestershire sauce
- 1 cup shredded mozzarella (115g)
- 1 Tbsp (15 ml) chopped parsley (optional garnish)
Instructions
- Crush the garlic and chop the onion and bell peppers into small pieces.
- In a large frying pan, heat the olive oil and add the ground beef. Cook on medium heat until the beef turns brown completely.
- Add the chopped onion, bell peppers, crushed garlic, basil, oregano, and pepper to the pan. Stir and cook until the onions become tender.
- Then, incorporate the diced tomatoes along with their juices, the uncooked rice, and the beef broth into the pan. Stir briefly to mix everything.
- Cover the pan with a lid and increase the heat to medium-high, allowing the broth to reach a full boil. Once it’s boiling, reduce the heat to low and let it simmer for 15 minutes. After that, turn off the heat and keep it covered for an additional five minutes.
- While the mixture is simmering, blend the tomato sauce with the Worcestershire sauce in a separate container.
- After the rice has rested for five minutes, take off the lid and use a fork to gently stir the ingredients together, as the peppers and tomatoes might have risen to the top during cooking.
- Drizzle the mixed tomato sauce over the top, then scatter the shredded mozzarella on the sauce. Replace the lid to let the cheese melt from the skillet’s warmth. Once melted, add some chopped parsley if desired and serve.
