Description

A comforting one-pan dish featuring tender chicken, fluffy rice, and sweet BBQ sauce, perfect for busy weeknights or lazy weekends.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 cup long-grain white rice
  • 1 cup BBQ sauce (honey or smoky style)
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups chicken broth (or water)
  • Salt and pepper, to taste
  • Optional: 1 tablespoon honey or hot sauce for extra sweetness or heat


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the diced chicken with salt and pepper.
  3. Once the oil shimmers, sear the chicken for about 5–7 minutes until golden brown; then remove and set aside.
  4. In the same skillet, add the chopped onion and sauté for 2–3 minutes until it softens.
  5. Add minced garlic, continuing to sauté for an additional minute.
  6. Stir the uncooked rice into the mixture, allowing it to toast for about a minute.
  7. Pour in chicken broth, scraping the bottom of the pan to combine everything.
  8. Return the seared chicken to the skillet, and stir in the BBQ sauce.
  9. Reduce the heat to low, cover the pan, and let it simmer for 18–20 minutes.
  10. Once the rice is tender, fluff it gently with a fork and let it sit for 5 minutes off heat.
  11. If desired, add extra BBQ sauce on top before serving.

Notes

Consider garnishing with chopped scallions or fresh herbs. Feel free to add vegetables like bell peppers or corn for extra flavor and nutrition.
