Ingredients
- 1 pound chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken breast and cook until browned.
- Stir in the minced garlic and cook for an additional minute.
- Add the orzo and chicken broth; bring to a boil.
- Reduce heat to a simmer and cover the skillet. Cook until the orzo is tender, about 10 minutes.
- Stir in the cherry tomatoes, spinach, and balsamic vinegar.
- Season with salt and pepper to taste.
- Cook for another 2-3 minutes until spinach is wilted.
- Serve hot.
