Description

A comforting and colorful one-pan meal featuring tender chicken, orzo pasta, and fresh vegetables, all brought together with balsamic vinegar.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken breast and cook until browned.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the orzo and chicken broth; bring to a boil.
  5. Reduce heat to a simmer and cover the skillet. Cook until the orzo is tender, about 10 minutes.
  6. Stir in the cherry tomatoes, spinach, and balsamic vinegar.
  7. Season with salt and pepper to taste.
  8. Cook for another 2-3 minutes until spinach is wilted.
  9. Serve hot.
