Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the diced onions, carrots, and celery for about 5 minutes until softened.
- Add minced garlic and sauté for 1 minute.
- Stir in dried thyme and basil, then pour in the chicken broth.
- Bring the chicken broth to a boil, then reduce heat.
- Add shredded chicken and gnocchi; cook until gnocchi float to the surface (about 5-7 minutes).
- Add fresh spinach and heavy cream; cook for an additional 2-3 minutes until spinach wilts.
- Adjust seasoning with salt and pepper, if needed.
Notes
For added spice, consider adding a pinch of red pepper flakes or hot sauce. Garnish with grated Parmesan before serving.
