Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onions, carrots, and celery for about 5 minutes until softened.
  3. Add minced garlic and sauté for 1 minute.
  4. Stir in dried thyme and basil, then pour in the chicken broth.
  5. Bring the chicken broth to a boil, then reduce heat.
  6. Add shredded chicken and gnocchi; cook until gnocchi float to the surface (about 5-7 minutes).
  7. Add fresh spinach and heavy cream; cook for an additional 2-3 minutes until spinach wilts.
  8. Adjust seasoning with salt and pepper, if needed.

Notes

For added spice, consider adding a pinch of red pepper flakes or hot sauce. Garnish with grated Parmesan before serving.
