Delightfully chewy cookies combining oats and butterscotch chips, perfect for sharing with loved ones.
Ingredients
- 1/2 cup (1 stick) unsalted butter, room temperature (113g)
- 3/4 cup packed light brown sugar (150g)
- 1 large egg, room temperature (56g)
- 1 tsp vanilla extract (4ml)
- 3/4 cup all-purpose flour (95g)
- 1/2 tsp baking soda (3g)
- 1/2 tsp ground cinnamon (optional) (1g)
- 1/2 tsp fine salt (3g)
- 1/8 tsp ground nutmeg (optional)
- 1 1/2 cups old-fashioned oats (120g)
- 1 cup butterscotch chips (175g)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and brown sugar until smooth.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk the flour, baking soda, optional cinnamon, fine salt, and nutmeg.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Fold in the old-fashioned oats and butterscotch chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges turn golden brown.
- Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
For chewier cookies, use old-fashioned oats and consider chilling the dough for at least 30 minutes before baking.
