Description

Delightfully chewy cookies combining oats and butterscotch chips, perfect for sharing with loved ones.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature (113g)
  • 3/4 cup packed light brown sugar (150g)
  • 1 large egg, room temperature (56g)
  • 1 tsp vanilla extract (4ml)
  • 3/4 cup all-purpose flour (95g)
  • 1/2 tsp baking soda (3g)
  • 1/2 tsp ground cinnamon (optional) (1g)
  • 1/2 tsp fine salt (3g)
  • 1/8 tsp ground nutmeg (optional)
  • 1 1/2 cups old-fashioned oats (120g)
  • 1 cup butterscotch chips (175g)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk the flour, baking soda, optional cinnamon, fine salt, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Fold in the old-fashioned oats and butterscotch chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges turn golden brown.
  9. Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

For chewier cookies, use old-fashioned oats and consider chilling the dough for at least 30 minutes before baking.
