Ingredients
- 1/2 cup (120 ml) unsweetened almond milk, plus more as needed
- 1/2 cup (120 ml) plain yogurt
- 1 large egg
- 2 tablespoons (30 ml) maple syrup, plus more for serving
- 1 tablespoon (15 ml) vegetable oil, plus more for the pan
- 1 teaspoon (5 ml) vanilla extract
- 2 cups (200 g) whole rolled oats
- 2 teaspoons (10 ml) baking powder
- 1/2 teaspoon (2.5 ml) cinnamon
- 1/2 teaspoon (2.5 ml) sea salt
- Fresh fruit, for serving
Instructions
- Combine the almond milk, yogurt, egg, maple syrup, vegetable oil, vanilla extract, oats, baking powder, cinnamon, and salt in a blender and process until the mixture is smooth. Transfer this blend into a large mixing bowl and mix thoroughly to ensure uniformity.
- Warm a nonstick frying pan over medium-low heat and lightly coat it with oil. Using a ⅓-cup measure, pour portions of the batter onto the pan. Cook each pancake for about 1 to 2 minutes on each side until they are puffed up and have a golden hue, adjusting the heat as necessary and cooking in batches. If the batter thickens between batches, add 1 to 2 tablespoons of almond milk to thin it out as needed.
- Accompany with maple syrup and fresh fruit when serving.
- Yields approximately 6 pancakes.
Notes
- For a smoother consistency, swap plain yogurt with Greek yogurt.
- Experiment with various fresh fruits for diverse flavors and textures.
- Enhance the taste by adding a pinch of nutmeg or a hint of lemon zest to the batter.
