Ingredients
- 2 cups (240g) old fashioned oats, divided
- 3 large apples, divided, peeled and diced
- 1/3 cup (80ml) maple syrup
- 2 tsp (10 ml) vanilla extract
- 2 tsp (10 ml) cinnamon
- 1 tsp (5 ml) baking soda
- 1 tsp (5 ml) baking powder
- 1/4 cup (60ml) oat milk
- 1/4 cup (60g) dairy-free yogurt
- 1/2 cup (120g) unsweetened applesauce
- 2 large eggs
- 2 tbsp (30ml) vegetable oil
Instructions
- Turn on your oven and set it to 350°F. Lightly coat a 9 x 9 baking dish with a non-stick spray and put it aside.
- Reserve 1 cup of chopped apples and 1/2 cup of oats for later.
- Combine the rest of the apples and oats with the maple syrup, vanilla extract, cinnamon, baking soda, baking powder, oat milk, dairy-free yogurt, applesauce, eggs, and vegetable oil in a blender.
- Process the mixture for 30 to 60 seconds until everything is well mixed.
- Carefully remove the blender blade and gently mix in the reserved oats and apple pieces by hand.
- Transfer the blended oatmeal mixture into the greased baking dish.
- Place it in the oven and bake for 30 to 35 minutes, checking for a mostly clean toothpick when inserted into the center.
- Let the bake cool down fully before cutting and serving.
- Keep any leftovers in the fridge for up to one week.
Notes
- Consider adding chopped nuts or seeds to the reserved oats and apples for added texture.
- Sprinkle extra cinnamon on top of the bake before baking to enhance the flavor.
- For a sweeter dish, drizzle extra maple syrup on top of the baked oatmeal before serving.
