Ingredients

  • 2 cups (240g) old fashioned oats, divided
  • 3 large apples, divided, peeled and diced
  • 1/3 cup (80ml) maple syrup
  • 2 tsp (10 ml) vanilla extract
  • 2 tsp (10 ml) cinnamon
  • 1 tsp (5 ml) baking soda
  • 1 tsp (5 ml) baking powder
  • 1/4 cup (60ml) oat milk
  • 1/4 cup (60g) dairy-free yogurt
  • 1/2 cup (120g) unsweetened applesauce
  • 2 large eggs
  • 2 tbsp (30ml) vegetable oil


Instructions

  1. Turn on your oven and set it to 350°F. Lightly coat a 9 x 9 baking dish with a non-stick spray and put it aside.
  2. Reserve 1 cup of chopped apples and 1/2 cup of oats for later.
  3. Combine the rest of the apples and oats with the maple syrup, vanilla extract, cinnamon, baking soda, baking powder, oat milk, dairy-free yogurt, applesauce, eggs, and vegetable oil in a blender.
  4. Process the mixture for 30 to 60 seconds until everything is well mixed.
  5. Carefully remove the blender blade and gently mix in the reserved oats and apple pieces by hand.
  6. Transfer the blended oatmeal mixture into the greased baking dish.
  7. Place it in the oven and bake for 30 to 35 minutes, checking for a mostly clean toothpick when inserted into the center.
  8. Let the bake cool down fully before cutting and serving.
  9. Keep any leftovers in the fridge for up to one week.

Notes

  • Consider adding chopped nuts or seeds to the reserved oats and apples for added texture.
  • Sprinkle extra cinnamon on top of the bake before baking to enhance the flavor.
