Description

A comforting and creamy mushroom stroganoff dish that brings together rich flavors of sautéed mushrooms and garlic, perfect for cozy nights in or gatherings.


Ingredients

  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup sour cream or Greek yogurt
  • 2 tbsp soy sauce
  • 1 tsp paprika
  • 8 oz egg noodles or pasta of choice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, and sauté until translucent.
  3. Add mushrooms and cook until softened.
  4. Stir in the vegetable broth, soy sauce, and paprika; bring to a simmer.
  5. Cook egg noodles according to package instructions, then drain.
  6. Reduce heat and stir in sour cream or yogurt until combined.
  7. Add cooked noodles to the sauce, mixing until well-coated.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.
