Ingredients
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup sour cream or Greek yogurt
- 2 tbsp soy sauce
- 1 tsp paprika
- 8 oz egg noodles or pasta of choice
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, and sauté until translucent.
- Add mushrooms and cook until softened.
- Stir in the vegetable broth, soy sauce, and paprika; bring to a simmer.
- Cook egg noodles according to package instructions, then drain.
