Description
A comforting and flavorful mushroom spaghetti dish that brings warmth and connection to any table.
Ingredients
- 10 oz (280 grams) spaghetti or other pasta shapes
- 2 tablespoons olive oil or extra virgin olive oil
- 4 large garlic cloves, minced
- ¼ teaspoon chili flakes
- 1 lb (450 grams) mushrooms (portobello, cremini, etc.)
- 3 tablespoons fresh parsley, chopped
- ⅓ cup freshly grated parmesan cheese (optional)
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil over medium heat in a large skillet.
- Add the minced garlic along with chili flakes to the skillet. Sauté for about a minute until fragrant, but do not let it brown.
- Slice the mushrooms and add them to the skillet. Sauté for about 7-8 minutes or until the mushrooms are well-cooked and caramelized.
- Once the pasta is ready, drain it and reserve a cup of the pasta water.
- Combine the drained spaghetti with the mushroom mixture in the skillet. Toss everything together, adding a splash of reserved pasta water to create a light sauce.
- Season with salt and pepper to taste. Remove from heat and stir in fresh parsley.
- Serve hot, garnished with parmesan cheese if desired.
Notes
For a creamier sauce, consider blending in toasted walnuts for a delightful crunch. Store leftovers in an airtight container for up to three days.
