Description

A comforting and flavorful mushroom spaghetti dish that brings warmth and connection to any table.


Ingredients

  • 10 oz (280 grams) spaghetti or other pasta shapes
  • 2 tablespoons olive oil or extra virgin olive oil
  • 4 large garlic cloves, minced
  • ¼ teaspoon chili flakes
  • 1 lb (450 grams) mushrooms (portobello, cremini, etc.)
  • 3 tablespoons fresh parsley, chopped
  • ⅓ cup freshly grated parmesan cheese (optional)
  • Salt and pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil over medium heat in a large skillet.
  3. Add the minced garlic along with chili flakes to the skillet. Sauté for about a minute until fragrant, but do not let it brown.
  4. Slice the mushrooms and add them to the skillet. Sauté for about 7-8 minutes or until the mushrooms are well-cooked and caramelized.
  5. Once the pasta is ready, drain it and reserve a cup of the pasta water.
  6. Combine the drained spaghetti with the mushroom mixture in the skillet. Toss everything together, adding a splash of reserved pasta water to create a light sauce.
  7. Season with salt and pepper to taste. Remove from heat and stir in fresh parsley.
  8. Serve hot, garnished with parmesan cheese if desired.

Notes

For a creamier sauce, consider blending in toasted walnuts for a delightful crunch. Store leftovers in an airtight container for up to three days.
