Ingredients
- 1/4 cup (60 ml) olive oil
- 1 cup (240 ml) chopped onion
- 3/4 cup (180 ml) diced carrots
- 1/2 cup (120 ml) chopped celery
- 1 teaspoon (5 ml) minced garlic
- 1 pound (450 g) sliced fresh mushrooms
- 6 cups (1.5 L) chicken broth
- 3/4 cup (180 ml) barley
- salt and pepper to taste
Instructions
- Warm the olive oil in a large pot on medium heat. Add the onions, carrots, celery, and garlic, then cook while stirring until the onions are soft and see-through, roughly for 5 minutes. Mix in the mushrooms and continue cooking for an additional 3 minutes.
- Add the chicken broth and barley, then bring the mixture to a boil. Lower the heat, cover the pot, and let it gently cook until the barley is soft, approximately 40 to 50 minutes.
- Add salt and pepper to your preference before serving.
