Ingredients

  • 1/4 cup (60 ml) olive oil
  • 1 cup (240 ml) chopped onion
  • 3/4 cup (180 ml) diced carrots
  • 1/2 cup (120 ml) chopped celery
  • 1 teaspoon (5 ml) minced garlic
  • 1 pound (450 g) sliced fresh mushrooms
  • 6 cups (1.5 L) chicken broth
  • 3/4 cup (180 ml) barley
  • salt and pepper to taste


Instructions

  1. Warm the olive oil in a large pot on medium heat. Add the onions, carrots, celery, and garlic, then cook while stirring until the onions are soft and see-through, roughly for 5 minutes. Mix in the mushrooms and continue cooking for an additional 3 minutes.
  2. Add the chicken broth and barley, then bring the mixture to a boil. Lower the heat, cover the pot, and let it gently cook until the barley is soft, approximately 40 to 50 minutes.
  3. Add salt and pepper to your preference before serving.
