Ingredients
- – 1 large egg (about 50 g)
- – 2 ½ tablespoons (37 ml) ice cold water
- – 1 ½ cups (180 g) all-purpose flour
- – 1/2 teaspoon (3 ml) kosher salt
- – 10 tablespoons (140 g) cold unsalted butter, cubed
- – 1 cup (240 ml) ketchup
- – 3 tablespoons (45 ml) light brown sugar
- – 2 teaspoons (10 ml) soy sauce, divided
- – 1 pound (450 g) ground beef
- – ½ cup (60 g) plain breadcrumbs
- – 1 large egg (about 50 g)
- – ¾ cup (75 g) shredded carrot (about 1 carrot)
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) kosher salt
- – 1/4 teaspoon (1 ml) black pepper
- – 2 large candy eyes or sliced black olives
Instructions
- Set your oven to 400°F and prepare a baking tray with parchment paper.
- Mix together ketchup, light brown sugar, and 1 teaspoon of soy sauce in a small bowl.
- In a larger bowl, blend the ground beef, breadcrumbs, egg, shredded carrot, the other teaspoon of soy sauce, garlic powder, kosher salt, and black pepper.
- Combine half of the ketchup mixture into the meat blend and stir well.
- Shape a small ball from the meat mix for the mummy’s head, placing it on the lined tray. Form the remaining meat into an oval shape for the body, setting it next to the head and attaching them with your fingers.
- Spread the leftover ketchup mix over the meatloaf.
- For the dough, whisk the egg and ice-cold water together in a small bowl.
- Put flour and salt into a food processor and pulse to mix.
- Add the cold, cubed butter into the processor and pulse until it turns crumbly.
- Pour in the egg and water mixture, pulsing until a thick dough is formed.
- Dust a clean surface and rolling pin with flour, then shape the dough into a disc and roll it out into a large rectangle about ¼ inch thick.
- Slice the dough into thin, long strips approximately ½ inch wide.
- Arrange the strips over the meatloaf in a crisscross pattern to mimic mummy bandages, leaving a space at the top for the face. You might not need all the dough.
- Cook the meatloaf for 30 to 35 minutes, or until the dough is golden and a thermometer inserted in the center reads 165°F.
- Let the meatloaf cool, then add two “eyes” in the space left on the head. Cut into slices and serve.

- Enhance flavor by adding Worcestershire sauce to the meat blend before shaping.
