Ingredients
- 4 chicken breasts (3 if large in size)
- 4 1/2 in. slices fresh moz zarella (log or ball)
- 10-12 basil leaves
- 2 Roma tomatoes
- 2 tsp (10 ml) balsamic
- 2 T olive oil
- 2 Garlic cloves, minced
- 1 tsp (5 ml) Italian seasoning
- Sea salt and pepper
- Balsamic glaze (optional ), to serve
Instructions
- Heat your oven to 400°F.
- Cut the tomatoes into slices and finely chop the basil leaves. Combine them in a bowl, then mix with balsamic vinegar, olive oil, Italian seasoning, half of the minced garlic, and a dash of salt and pepper. Set this mixture aside.
- Sprinkle salt, pepper, and the remaining minced garlic over both sides of each chicken breast. Carefully use a sharp knife to slice through the center of each chicken piece, making sure not to cut all the way through.
- Place half a slice of mozzarella inside each chicken breast. Add the tomato basil mixture, then secure each end with toothpicks to keep everything in place.
- Arrange the chicken in a greased baking dish. Cook in the oven for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F.
- Let the chicken rest for a few minutes before serving. Optionally, drizzle with balsamic glaze and sprinkle extra chopped basil on top before enjoying.
