Ingredients
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 teaspoons cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onion, garlic, carrots, and bell pepper, and sauté until the vegetables are softened.
