Instructions
- Preheat the oven to 350° F. Line muffin tins with paper liners and set aside.
- Whisk the sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts until combined.
- Fold in the zucchini and carrots, ensuring an even distribution.
