Ingredients

- 2 teaspoons baking powder
- 2 tablespoons granulated sugar

- 3/4 cup milk (or dairy alternative)
- 1 large egg

- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until combined.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until just combined; do not overmix.
- Heat a non-stick skillet over medium heat. Pour small amounts of batter onto the skillet to form mini pancakes, allowing space between each pancake.
- Cook for 1-2 minutes or until bubbles form on top. Flip and cook until golden brown on both sides.
- Serve warm with your favorite toppings.
