Description

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk (or dairy alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or oil)
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined; do not overmix.
  4. Heat a non-stick skillet over medium heat. Pour small amounts of batter onto the skillet to form mini pancakes, allowing space between each pancake.
