Description

Delicious bite-sized treats that combine pancakes, sausage, and maple syrup, perfect for breakfast or snacking.


Ingredients

  • 2 cups complete pancake mix (just add water)
  • 1½ cups water
  • 1 cup shredded cheddar cheese
  • ¼ cup maple syrup
  • 1 pound breakfast sausage
  • Cooking spray or mini muffin liners


Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Add the breakfast sausage to a skillet over medium-high heat. Break it apart as it cooks, stirring frequently until browned and fully cooked.
  3. Drain off excess grease and let the sausage cool slightly.
  4. Whisk together the pancake mix and water in a large mixing bowl until mostly smooth.
  5. Stir in the shredded cheddar cheese and maple syrup until evenly combined.
  6. Fold the cooked sausage into the pancake batter mixture until well distributed.
  7. Spoon the batter into a mini muffin pan, filling each cup about ¾ full.
  8. Bake in the preheated oven for 12–15 minutes, until golden brown and a toothpick comes out clean.
  9. Let the bites cool in the pan for a few minutes before transferring to a cooling rack.

Notes

Serve warm with extra maple syrup or salsa for dipping. Perfect for meal prep and quick snacking throughout the week.
