Ingredients

  • – 1 (12 oz (340 g)) package vanilla wafers
  • – 2 (8 oz (227 g)) packages cream cheese
  • – 150g white sugar (3/4 cup)
  • – 2 eggs
  • – 1 teaspoon (5 ml) vanilla extract
  • – 595g cherry pie filling (21 oz)


Instructions

  1. Collect all the necessary items.
  2. Set your oven to 350°F (175°C) for warming up. Place paper liners in two miniature muffin trays, each holding 24 cups.
  3. Crush the vanilla wafers thoroughly and put 1/2 teaspoon of the crumbs into the base of each paper liner.
  4. In a mixing bowl, combine the cream cheese, sugar, eggs, and vanilla extract. Whisk until the mixture becomes smooth and airy. Spoon this mixture into each muffin liner, leaving just a small gap at the top.
  5. Place the trays in the preheated oven and bake for around 15 minutes until the cheesecakes are firm. Let them cool down. Spoon a bit of cherry pie filling on top of each cheesecake.
