Description

Crispy golden rice balls filled with gooey mozzarella, perfect for gatherings and game nights.


Ingredients

  • 2 cups cooked risotto
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste
  • Marinara sauce for serving


Instructions

  1. Let the cooked risotto cool slightly.
  2. Form the risotto into balls, placing a cube of mozzarella cheese in the center of each ball.
  3. Roll the balls in flour, dip them in the beaten eggs, and coat them in breadcrumbs.
  4. Heat vegetable oil in a deep pan over medium heat.
  5. Fry the arancini in batches for 3-4 minutes until golden brown and crispy.
  6. Remove and drain on paper towels.
  7. Season with salt and pepper.
  8. Serve hot with marinara sauce.

Notes

Experiment with adding herbs or spices to the risotto to enhance flavor. Keep hands wet while shaping to prevent sticking.
