Ingredients

  • – 1 cup (240 ml) quinoa
  • – 1 lemon
  • – 1 teaspoon (5 ml) oregano
  • – 3/4 teaspoon (4 ml) kosher salt
  • – 1/4 teaspoon (1 ml) black pepper
  • – 1/4 cup (60 ml) extra virgin olive oil
  • – 4 scallions (white and green parts)
  • – 2 bell peppers (red, yellow or orange)
  • – 1/2 cup (120 ml) pitted green olives, drained
  • – 1 English cucumber
  • – 1/2 cup (60 g) crumbled cheese


Instructions

  1. Prepare the quinoa by rinsing it thoroughly with cold water, then cook following the directions provided on the package.
  2. While the quinoa is cooking, combine the lemon juice and zest in a serving dish, adding oregano, salt, and black pepper. Gradually whisk in the olive oil, tasting and adjusting the flavor as needed.
  3. As soon as the quinoa is cooked through and soft, incorporate it into the lemon mixture, stirring well to ensure it absorbs the dressing. Allow it to cool fully before moving on to the vegetables.
  4. As the quinoa cools, start chopping the vegetables. Slice the scallions, dice the bell peppers, and chop the olives into smaller bits. Halve the cucumber lengthwise, then quarter it and slice it. Mix these into the quinoa.
  5. Finally, sprinkle the crumbled cheese on top and serve. For added flair, garnish with fresh oregano leaves if you wish, although this is optional.
