Ingredients
- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- Heat a non-stick skillet over medium heat and add olive oil.
- Lay a filled tortilla in the skillet and cook for 3-4 minutes until golden brown.
- Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy.
- Remove from skillet, slice into wedges, and serve warm.
Notes
For extra crispiness, lightly brush both sides of the tortillas with olive oil before cooking. Customize fillings with other veggies or cheese to enhance flavors.
