Ingredients

  • – 450g ground beef, browned and crumbled on the stovetop and drained (1 lb)
  • – 1 red bell pepper, diced
  • – 1 green bell pepper, diced
  • – 1 sweet yellow onion, diced
  • – 2 garlic cloves, minced
  • – 900ml beef broth (two 15-oz. cans) or about 4 cups
  • – 425g can tomato sauce (not paste, make sure it’s sauce) (15 oz)
  • – 411g can fire-roasted diced tomatoes, do not drain (14.5 oz)
  • – 1 tsp (5 ml) oregano, can use Italian seasoning
  • – 1/2 tsp (3 ml) dried basil
  • – 1/2 tsp (3 ml) salt
  • – 1/4 tsp (1 ml) pepper
  • – 120g uncooked Minute Brand Rice WAIT TO ADD (1/2 cup, Minute Rice is parboiled rice that is dried)
  • – Mozzarella cheese


Instructions

  1. Place all the ingredients into the slow cooker, except for the rice. Mix thoroughly.
  2. Secure the lid on the slow cooker.
  3. Set the cooker to HIGH for 4 hours or LOW for 8 hours.
  4. Once the timer goes off, incorporate the uncooked Minute Rice. Mix well.
  5. Cover again and let it cook on HIGH for an additional 20 minutes.
  6. Mix once more and dish out.
  7. Optionally, garnish with mozzarella cheese before serving.

Notes

  • Consider enhancing the flavor by adding a dash of Worcestershire sauce or a sprinkle of red pepper flakes before cooking.
  • Use lean ground beef or turkey for a healthier option instead of regular ground beef.
  • For a thicker consistency, add a tablespoon of cornstarch mixed with water during the last 30 minutes of cooking.
