Description

A comforting and hearty meatball soup filled with tender meatballs and fresh vegetables, perfect for family dinners.


Ingredients

  • 1 onion
  • 300 g carrots
  • 300 g potatoes
  • 400 g mixed ground meat
  • 1 egg
  • 2 tablespoons breadcrumbs
  • 1/2 teaspoon mustard
  • 2 tablespoons butter
  • 1.2 liters vegetable broth
  • 1 bay leaf
  • 100 g long-grain rice
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste


Instructions

  1. Finely chop the onion and peel the carrots, then slice them into thin rounds.
  2. Dice the potatoes into small cubes.
  3. In a mixing bowl, combine ground meat, egg, breadcrumbs, and mustard. Season with salt and pepper and shape into small meatballs.
  4. Melt butter in a large pot over medium heat, and add chopped onions, carrots, and potatoes. Sauté for about 2 minutes.
  5. Pour in vegetable broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add meatballs and rice to the pot, stir in chopped parsley, and allow to cook for an additional 10 minutes.

Notes

For optimal results, wet your hands slightly when shaping meatballs, and use high-quality broth for better flavor.
